Four’s fine food finale
A menu of fine cuisine is coming to West Nottinghamshire College’s fine dining restaurant – Refined – next week as four students graduate and showcase their six course menu.

Graduating students Mitchell Simpson, 19, Abbi Thornton, 18 and Wade Clarke, 23, are all studying the NVQ Level 3 Diploma in Professional Cookery and 18-year-old Jazzmin Stupple is studying the NVQ Level 3 Diploma in Hospitality Supervision and Leadership.
A six-course British contemporary fine dining meal is being showcased by the foursome on Friday 15 May with Jazzmin heading up the front of house arrangements with vintage-style cocktails and décor.
The chefs will be cooking up delights such as a starter of monkfish, sea bass, king prawn and pea shoots in a lemon aioli with shaved fennel and tomato pearls.
Main courses include spring lamb with petit pois a la Francais or Thai crusted cod with spiced risotto and pak choi in a Thai broth.
From the dessert menu, diners can choose almond and honey cake, chocolate fondant or an assiette of coconut which comes with a Malibu ice cream.
Mitchell, from Rainworth, who works as a chef at the Fox and Hounds pub in Blidworth, said: “I’ve really enjoyed my three years at college and I’ve grown to appreciate food and how to create a great dish.
“I’m inspired by many top British chefs and I love cooking traditional British food best.’’
Abbi, from Alfreton, currently works at Bourne’s restaurant in Denby and is hoping to work in a hotel after her graduation. Jazzmin, who lives in Shirebrook, is keen to get some experience of bar work in the UK before embarking on a supervisory role on a cruise ship.
Meanwhile, Wade, from Mansfield, would enjoy a role as a chef in the UK creating great British food in the style of one of his favourite chefs, Tom Kerridge.
