Matt’s Michelin-star dream

A student with ambitions to be a Michelin-starred chef will be graduating from his catering course at West Nottinghamshire College next week.

Matt Copeland bows out from his VRQ Level 3 Professional Cookery course by serving up a five-course fine dining menu at his graduation event at the college’s Number 19 Brasserie on Friday 15 June.

The 21-year-old will be cooking a range of starters including smoked barbeque mackerel and quail, and a fish course of sea bass Bouillabaisse.  Main courses include belly, loin and cheek of pork, lamb noisette and a chicken dish.

Diners can also choose from a dessert selection that includes lime meringue, rhubarb rice pudding and chocolate marquise. 

Matt, from Kirkby-in-Ashfield, enjoys the work of chef Nathan Outlaw who owns a Michelin-starred restaurant in Cornwall and has featured on BBC television’s Great British Menu.

He said: “My ultimate dream would be to own a restaurant by the sea and become Michelin-star rated like Nathan Outlaw.

“My time at college has gone really quickly but I’ve enjoyed it a lot and learnt so much about the catering industry. It’s also been great to be involved in producing the range of jams and preserves for the new Forest Ferret company run by the college’s enterprise team.”
